Air Fryer Pork Rind-Crusted Crab Rangoon Bites

Ingredients:
- 8 oz cream cheese, softened to room temperature
- 1 cup (approx. 5 oz) gluten-free imitation crab, finely chopped
- 2 tbsp green onions, green parts only, finely sliced
- 1 teaspoon gluten-free soy sauce or tamari
- ½ teaspoon garlic powder
- 1 cup crushed pork rinds
- 2 tablespoons grated parmesan cheese
- ¼ teaspoon erythritol sweetener
- 1 large egg
- 1 tablespoon water
- Avocado or olive oil cooking spray
- In a medium mixing bowl, combine the softened cream cheese, finely chopped imitation crab, green onions, soy sauce, and garlic powder. Mash and mix with a fork or rubber spatula until completely smooth and uniform.
Directions:
Line a plate or small baking sheet with parchment paper.
Scoop the cream cheese mixture into 18 equal portions (about 1 tablespoon each).
Roll each portion between your hands into a smooth ball.
Place the balls on the parchment paper and put the plate in the freezer for 15 minutes. Do not skip this, it firms up the cream cheese so it doesn't melt in the air fryer.
In one bowl, whisk the egg and water together until smooth.
Mix the crushed pork rinds, parmesan cheese, and sweetener together and place in another bowl.
Take the chilled filling balls out of the freezer.
Drop a ball into the egg wash to coat it completely. Move it into the pork rind mixture, pressing firmly so the crumbs stick to all sides. Put the coated balls back on the parchment paper.
Put the fully breaded bites back into the freezer for another 15 minutes. This locks the crust into place and deeply chills the interior.
Preheat: Set your air fryer to 375°F.
Line the air fryer basket with parchment and lightly spray. Place the frozen bites into the air fryer basket in a single layer. Leave a little space between each bite so the air can circulate. Do not overcrowd.
